About F-ing time. These “people” have been calling me at least once a week for the last 6 months, maybe even longer, I’ve lost track. I’ve NEVER given them any info on the few occasions where I did not let them go to voicemail. They’ve ignored repeated requests (and later demands) to be place on thier do not call list, and I’ve reported them to the Do Not Call registry multiple times. (All of my numbers are registered on that list.) I just wish it hadn’t taken annoying a senator to have anything be done about it.

I’ve been neglecting this space again, Haven’t I?

I’m not sure that’s going to change any time soon. I suppose I should post pictures of the boys, or some kind of content. Maybe a new recipe.

I don’t know, I think maybe I’ll just ramble on for a few more sentences and then hit publish. I’m going to go see Star Trek tonight, several people who’s opinions on similar topics I trust have said it is a good thing. I’ll find out for myself tonight.

These last few months have been somewhat hectic. Squiddo getting registered for kindergarten. Kraken turning one. Concerts, wedding plans (2 friends tying the knot this summer,) birthdays, etc.

Ok, I think I’ve rambled enough. I should probably get back to work.

Slow-cooker Tostada Meat

A friend of mine asked me for this recipe. I’m putting it here so that it is easier to find should I need it again. The magazine page is getting a little worn. (This was originally found by my wife in Family Circle magazine. May 2008 pg. 204)

(To make actual tostadas, add cheese beans, lettuce, salsa, etc to a tostada shell along with the beef. The meat is also good in a variety of other applications…)

What you need:

1 1/2 lb. boneless beef round
1/2 tsp salt
1/2 tsp black pepper
1/4 cup lime juice
3 garlic cloves, finely chopped
1 jalapeno, seeded and chopped
1 large onion, chopped
1 tbsp chili powder
1/4 tsp cumin
1/8 tsp cayenne pepper

What you do:

Sprinkle steak with salt and pepper. Place 3 tbls of the lime juice, the carlic, jalapeno, onion, chili powder, cumin, and cayenne in a slow cooker. Place beef on top and cook on HIGH for 6 hours or LOW for 8 hours.

Remove beef to a cutting board and when cool enough to handle, shred with fingers or using two forks. Place shredded beef in large bowl. Add remaining tbsp of lime juice and liquid from the slow cooker (along with solids –this is where I differ from the magazine – not a huge thing, but whatever.) to the shredded beef.

At this point, you can use the beef in tostadas, tacos, burritos, salad, whatever. 🙂

In other news

I broke my foot the day after my last post. I should probably write about that story, I’ve certainly told it enough times. It’s on the mend, and it’s gong slower than my doctor would like. I’m now (finally) in a walking cast and using a single crutch, but I want to see about switching to a cane.

The boys are doing well. Trouble is sleeping through the night and eating solid foods. Big Trouble loves being an older brother, and has been amazingly helpful during the last few weeks while I’ve been semi-out-of commission due to the broken foot.

I picked up “Spore” for the PC and “The Force Unleashed” for the Wii recently. I haven’t much of either, but I am (mostly) enjoying them. I just got to the Act I / Act II transition in TFU. I must say that is an interesting plot development/twist the writers snuck in there. (Not going to spoil it for anyone that stumbles across this post.)

My foot hurts – I think I need to go take some advil and a calcium supplement.
